For all those that attended the Italian Workshop - I now have a cheese recipe that does not require you to make it the day before:
Nut Cheese
2c Cashews-soak 1-2 hours
1c pine nuts-soak 1-2 hours
2T nutritional yeast
1 yellow pepper
2T fresh parsley
1T fresh thyme
1t salt
juice of one lemon
Process all ingredients together adding a little water if needed (Try to keep relatively dry)
Use as your cheese layer in your Lasagna & enjoy - I made one last night & have just had the leftovers tonight -YUM!! :-)
I tried the Lasagne Cheese last night and it was excellent.
